Space Gem is our little gem straight from the Bolivian mountains. This lot comes from Nancy Quispe and Mariano Sóliz from the community of Taipiplaya in the Caranavi region. They grow the coffee on their family farms, while the local ASOCAFE cooperative takes care of the processing.
Nancy and Mariano are truly passionate coffee producers, and most of their coffees score well above 85 SCA points — quite an achievement in a lesser-known coffee-producing country like Bolivia.

Like sour cherries, citrus and flowers.
Processing:
This lot is processed using the washed method. The farmers hand-pick only perfectly ripe cherries and deliver them after harvest to one of ASOCAFE’s four central processing stations.
The cherries are first carefully sorted and then depulped. A layer of sweet fruit pulp remains on the beans. During fermentation, this layer gradually breaks down, after which the beans are thoroughly washed with clean water.
Finally, the coffee is sorted once again and dried to its optimal moisture content. Washed processing helps bring out the clean, juicy and elegant character of this coffee.
Best for:
A great choice for the Hoop, Pulsar, V60, batch brew, AeroPress or pretty much any other filter brewing gadget. It also tastes fantastic as espresso.
Barista’s recommendation:
For the best flavour, brew this coffee with water at 100 °C. The idea that hotter water can “burn” the coffee is a myth. We roast the beans at 600 °C, so there is no way you can burn them with brewing water.
Always use filtered or bottled water with an alkalinity of 60–80 ppm.
Good to know:
For filter coffee, always use the beans at least 7 days after the roast date. After opening the bag for the first time, leave it open for at least 4 hours before brewing. This helps prevent unwanted bitter flavours in the cup.
